Blueberry Cinnamon Smoothie

I am always looking for new smoothie recipes to make at home. I recently was in a cute lunch spot in Boston and tried this delicious smoothie made with blueberries, cinnamon and dates. I never thought to put cinnamon in the smoothie, but I absolutely loved it. The cinnamon adds a spicy sweetness and makes you feel like you’re eating a treat.

I did not have any dates at home, so I decided to use a half a frozen banana to sweeten up the smoothie, and it worked perfectly. I used peanut butter in my version, but any nut butter would work just fine.

I also used cacoa nibs which I love. They don’t blend completley in the blender so you get some nice texture to the smoothie with the little chocolate bits. If you don’t have cacao nibs and don’t want to buy them, you could substitute with cacao powder to give it a little chocolatey flavor.

Ingredients

  • 1 cup unsweetened soy milk (almond milk would be great too)
  • 1 cup spinach or dark green
  • 3/4 cup frozen blueberries
  • 1/2 frozen banana
  • 1.5 tbsp.cacao nibs
  • 1 tbsp. natural nut butter
  • 1/2 tsp. cinnamon

Instructions

  1. Blend all ingredients together and enjoy!
